Fish Pie

I realised just now that I don’t actually have a recipe for Fish Pie as I have been making it for so long it just gets thrown together with whatever fish we have and more recently we have started to use Sweet Potato instead of normal potato for the topping.  We occasionally add egg, sweetcorn or leak as well, but I have kept the recipe below to the basic one so you can choose any additions yourselves!

Ingredients

1 1/2 lbs fish – generally I use a mixture of smoked and unsmoked cod or haddock but you can also add salmon and prawns.

1lb potato or Sweet potato

1 bag of fresh spinach steamed and drained.

For the White Sauce

25g / 1 oz butter

25g / 1 oz Plain Flour

3/4 pint of milk

75g / 3oz Grated Cheese

1 Tsp Mustard

1 Tbs Flour

Method

Preheat the over to 175 degrees (mark 5 in the motorhome)

Place the fish in a pan along with the milk and heat until it starts to boil (If using Prawns use uncooked and leave aside for this part).  Turn off and drain the milk into a jug to use for the white sauce.

Cut the potatoes into cubes and boil until soft enough to mash.  Drain and mash, adding salt and pepper to taste.

Remove all skin and any bones from the fish and place into the bowl you will be using to bake the fish pie in (Add the prawns if using them here).

Make the cheese sauce by melting the butter then adding the flour, mixing together to make a roux.  Little by little add the milk, stirring to incorporate into the mix.  When all the milk is incorporated and the mix is smooth add the mustard and grated cheese and stir until melted and smooth.

Add the mix to the fish and mix so that if you have different types of fish it is evenly distributed.

Layer the wilted spinach on top of the fish mixture and then put the mashed potato on top.

Cook for 40-45 minutes until heated through and slightly brown on top.
