Mixed Bean Salad

This recipe serves 6 people as a side but if you want to scale it down either use just one type of bean or get a can of mixed pulses/beans as it works just as well. You can use whatever beans you like, we just tend to use what we have in the cupboard.

Ingredients

3 x cans of different beans – i.e. Kidney beans, Haricot beans, Black eyes beans

60g Cashew Nuts or Peanuts

1 x Red Pepper

1 x red onion

1 Tbsp Mayonaise

1/Tbsp Dijon Mustard

1 x Tsp Red wine vinegar

A few drops of chilli sauce

Method

Chop the onion and red pepper, rinse the beans and let them drain. Mix the mustard, mayonaise, red wine vinegar and chilli sauce together and mix into the beans, pepper and onions. Add the nuts just before serving.
