You can pretty much add whatever you want in our version…. including Chorizo, no matter what the Spanish say! However to give you something to work from this is the version we generally cook if it is for the two of us.
Half a Chorizo, chopped
200g Raw Peeled Prawns
200g Paella Rice
1 x tin of Artichoke hearts (we prefer the quartered ones)
Handful of Green beans, chopped
1 x Red pepper, diced
1 x Leek, sliced
Cook the salmon in the stock until the water starts to boil. Remove the salmon and place to one side to add at the end but reserve the stock. Fry the chorizo for a couple of minutes in the pan, add the chopped leek and continue to fry for a couple of minutes. Add the rice and then after another couple of minutes add the stock. Leave uncovered on a medium heat, allowing the mix to boil. Add the peppers and green beans and leave to cook for 12 minutes (or however long your rice takes to cook, less 5 minutes). 5 minutes before the rice is due to be cooked add the artichoke hearts, then a minute later the prawns and salmon. Turn off the light and cover, leaving it to rest for five minutes before serving.
