Stuffed Chicken Breast

Such an easy, tasty meal to make … if you have an oven!  You can stuff your chicken with whatever you like, just remember that the more you put inside it, the longer it will take to cook through.

We normally stuff the chicken with sausage meat but more recently have also used black pudding.

Ingredients (For two people)

2 Chicken Breasts

50g Sausage Meat or Black Pudding

2 x Sun dried Tomatoes

2 x Fresh Basil Leaves (If you have it)

3 Slices of Prosciutto/Serrano Ham

Method

Butterfly the Chicken Breasts to open them out to make a pocket.  Put half the sausage meat/black pudding in each chicken breast and add a sun dried tomato and basil leaf.

Fold the chicken back round the filling and wrap the ham around the chicken breast to secure the filling inside it.

Wrap the Chicken parcel into Silver foil and cook in the oven at 180 degrees for roughly 30 minutes.  Check to ensure that the liquid is running clear from the chicken and it is cooked through.  We serve with Sweet Potato and Brocolli or Green Beans.
